good with tortilla chips or chocolate covered tortilla chips or graham crackers or  sweet chips or apple crisps or spoons

Last week I went Strawberry Picking (one of my favorite “school’s out for summer” activities). I picked about 12 pounds (and am thinking about going back this week for more) of berries. One of the things I knew I wanted to make was a fresh Summer Strawberry Salsa. There are many variations of Strawberry Salsa -varying from sweet to with a bite – I went somewhere in the middle (although the longer you let this sit, the more bite-ierr it gets, I preferred it fresh day #1)

One of my inspirations for my Summer Salsa was one of my favorite (former) students. She wrote me the sweetest card which included the quote “I would thank you from the bottom of my heart, but for you my heart has no bottom” (which just goes to show you how sweet this girl is). Additionally she gave me a gift of two of my favorite foods… Chips and Salsa (just the chips so I could make my own Salsa) and Chocolate (but a bag of baking chips so it was more useful). The thought that went into this gift explains why I adore this girl so much – I am lucky to get to know kids like this all the time!! I jokingly said to her that since she gave me chips and chocolate I could do Chocolate Covered Tortilla Chips, and she kinda gave me a strange look and told me I could do whatever! As I got to thinking though, I realized that the sweet/salty taste of Chocolate Covered Chips would pair perfectly with a Sweet Salsa – so here we have “Student Strawberry Salsa”

Fresh Summer Strawberry Salsa

Strawberry Salsa

Serves: 4
  • about 2 cups strawberries, diced
  • 1 peach, diced (optional)
  • ¼ cup sweet onion, finely chopped
  • 3 Tbs fresh mint, minced
  • 2Tbs fresh basil, minced
  • 1 Tbs lime or lemon juice
  • 1 tsp agave nectar
  • 1 tsp dried chili (optional)
  • ¼ tsp kosher salt
  1. Chop/Dice your ingredients and add them into a mixing bowl. Stir in your liquids & taste. Add your spices as needed. Let set for about 15 minutes or up to whatever. The sooner you eat it, the fresher it will taste – so that is up to you!

    • Anything covered in Chocolate is good, especially strawberries – so I figured it would work… thanks gor getting the ball rolling!

  3. Great idea! I’ve made a fruit salsa before and it’s always a hit…its a great way to use any left over fruit. I usually make my own baked pita chips and dust them with cinnimon sugar for it but I like your chocolate covered tortilla chip idea 🙂

    • I’m hoping to go picking again and making a no-onion salsa in which I want those baked pita/Cinnamon chips along the side of 🙂

    • … and I will have a hard time finding students as amazing as you girls (which is why you better stop by and see me when you come to help with band)!!!
