My Favorite Salad

This is my Go-To Salad!

It is so easy to put together, and tastes like a million bucks (but barely costs any bucks). Years ago when I used to go to a friend’s house for dinner; his mom would make a huge salad whenever she knew I would be there because she knew how much I loved her salads. After eating her salads a few dozen times, I finally started to pay attention to how she did it. After a few years (and never ever measuring) – here is my version of the best salad ever.

Teacher-Chef Easy Salad

AND – just like every salad, feel free to adjust the greens and other things based on what you have on hand and what you like. Feel free to add croutons or leave out cucumber or whatever tickles your fancy that day. Play around with the vinegar to oil ratio or even substitute in your favorite kind of vinegars. My Favorite Salad

Ingredients
  • 1 romaine heart
  • 1/2 cup arugula
  • 1/2 small onion thinly sliced
  • 1/2 cucumber, peeled and cut into chunks
  • 1 small tomato diced (or halfed cherry tomatoes)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1 tsp dill
  • 2 T Red Wine Vinegar
  • 2 T high quality Olive Oil
Instructions
  1. Chop and combine all salad ingredients. Top the salad with the spices and mix well. Then add the liquid dressing ingredients and mix well. ENJOY!

Two Years Ago – Spanakorizo – my version of Spanikopita + Rice… this was amazing and we still talk about it, maybe we’ll have to re-photograph it one day soon for you!

(My answer: I LOVE Homemade Cesear Salad, I’ll have to share that recipe one day too – it is a little more involved and higher calorie than this one here though)
