Breakfast Pina Colada

Spring is in the air. Summer is right around the corner. You struggle to eat breakfast every day. You long to spend long days dancing in the summer breezes. If you can relate to any of those statements, and maybe even like getting caught in the rain (are not into yoga or have half a brain) – then you have Jimmy Buffett on the brain!

No, but seriously – if you are a breakfast smoothie person (you’re looking at one right here, its my go-to breakfast most days of the week) than you are going to love this smoothie! It tastes so rich, but in reality is loaded with goodies for you! It has oats to keep you full, pineapple and coconut to satisfy the sweet tooth. This Breakfast Smoothie can even be enjoyed as a mid-afternoon snack, light enough to hold you over but not so heavy that it weighs you down for dinner. How about enjoying this in the evening after a workout or a busy day when you just want to relax? I bet if you cut the oats out, you could even have a cocktail ready to serve to guests of any age!

Ingredients
  • 2 cups diced pineapple, chilled
  • 1 cup coconut water
  • 1 cup milk (plain, coconut, almond, soy, whatever)
  • 1/2 cup yogurt (coconut, greek, plain, etc)
  • 1/2 cup oats (old fashioned or quick)
  • 1 large frozen (very ripe) banana
Instructions
  1. Put all ingredients in the blender & let it fly until smooth!
