Pineapple Guacamole

Bring some Summer to your Salsa…

Cinco de Mayo seems a perfect excuse to enjoy Mexican Food. Here in our household though; dinner time is a perfect excuse to eat Mexican Food. We strive to “Eat Around the World” – but I think that Mexican Flavors seem to be the most frequent dishes to grace our table.

Guacamole is perfect just as it is, but when you whirl it up with some ripe pineapple and season it up, you now have an almost salsa-like topping. We served this on top of some grilled fish, but I would love to have it with some chips, on top of chicken, or even on top of some steak. I wish I would have photographed this the first day I made instead of the leftovers the next day – the colors just aren’t as beautiful, so I am also sharing some phone photos… you’ll enjoy this!

Pineapple Guacamole

Serves: 4
Ingredients
  • 1 cup chopped pineapple
  • 1/8 cup finely chopped red onion
  • handful cilantro
  • 1/2 chopped diced jalapeno
  • 1 avocado
  • splash of lime juice
  • salt to taste (about 1/4 teaspoon)
Instructions
  1. Chop up all your ingredients and throw them all (except for avocado) into the bowl of your food processor. Whirl it around until you have fine chunks. Add in your chopped avocado until you have it all combined. Taste & adjust seasoning as needed.
  2. Serve over your choice of meats or with chips
