Garlic Pesto Snow Pea Tortellini

Garlic Pesto Snow Pea Tortellini… a long title, but worthy of every bit of it. Sometimes the simplest dishes are the best ones. I threw together this tortellini on a whim when Sister Chef saw a package of fresh tortellini at Aldi and told me that is what we should make for dinner …ok! We had the Snow Peas from our CSA, as well as a bunch of Garlic Scapes just begging to be made into pesto – so dinner was planned!

This comes together in about 5 minutes if you are using store-made pesto, but I encourage you to take the extra 10 minutes (and the extra dish) it takes to make your own Garlic Scape Pesto, you will not be disappointed!

Every bite of this is loaded with flavor – it fills you up thanks to the tortellini, but it doesn’t weigh you down at all thanks to all of the veggies and green goodness. Feel free to serve this up with a grilled steak or chicken if you want a meat to go along with it – but for our family a dish like this is a perfect dinner.

Ingredients
  • 1 lb Fresh Tortellini
  • 1 Qt Snow Peas
  • 1/2 Cup Garlic Scape Pesto
Instructions
  1. Make Pesto (6 garlic scapes, 1/4 cup basil, 1/4 cup olive oil, salt – blend until smooth in food processor, add water if needed to thin it out)
  2. Wash Snow Peas & cut off ends if needed (get rid of any rough strings, mine didn’t need this)
  3. Bring water to boil
  4. Add fresh tortellini and snow peas – boil according to package directions (about 4 minutes).
  5. Drain and add in pesto
  6. Top with Chive Flowers and Parmesan Cheese if desired

 

 

5 Years Ago – we were working on testing out our Homemade DIY Wedding Centerpieces! They looked just as I imagined they would, were so much fun to put together with our Wedding Party & saved us a ton of money! It was SO simple to put together these Wildflower Inspired Centerpieces just by collecting a few dozen Wine Bottles & then placing a bulk order of certain stems that we needed. Our florist was more than happy to order the flowers that we wanted and we just picked them up in 5-Gallon Buckets from her (and returned the buckets when we picked up my bouquet the next day). These little details like the centerpieces are part of what made our day truly “us” and special (and affordable)
